Potato Noodles

Leftover mashed potatoes make quick and easy noodles for any meal.

Ingredients 

  • 2 cups mashed potatoes, cooled.
  • 4 cups flour
  • 3 eggs
  • 1/4 cup oil
  • 1 Tbsp salt


Directions

  1. Mix all ingredients and knead until smooth texture.

  2. Let rest for 30 minutes and roll out thinly on floured board.

  3. Cut into strips of desired thickness and put into rapidly boiling water, one at a time to avoid clumping.

  4. Cook for 7 minutes; rinse with cold water and drain well.



Tips & Variations

- Chop 2 large onions and fry in 1 cup butter or margarine, add noodles and heat to serving temperature.

- Add to vegetable or meat soup

- Serve on bed of sauerkraut

- Add tomato sauce, heat and serve
